Ingredients for 2 servings:

  • 4 eggs
  • 2 tbsp oil (South Styrian pumpkin seed oil)
  • 1 tbsp pumpkin seeds, chopped
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk the eggs with salt and pepper in a suitable bowl. Heat the pumpkin seed oil in a pan. Pour the egg mixture into the heated oil and wait until the egg is set. Fry for a shorter or longer time, depending on your taste. Always make sure the oil doesn’t get too hot, otherwise it will become bitter! To serve, transfer to a plate and sprinkle with the chopped pumpkin seeds.
