Ingredients for 4 servings:

  • 2 m.-large zucchini
  • 2 medium-sized bell peppers, red
  • 6 m.-sized carrot(s)
  • 1 fennel bulb(s)
  • 1 bunch of spring onions
  • 1 large onion(s)
  • 4 garlic cloves
  • 2 tbsp olive oil
  • vegetable broth
  • salt and pepper
  • oregano
  • Thyme
  • 500 g salmon

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

low in calories, no carbohydrates

Wash and chop the vegetables. Add the oil to a pan and lightly fry the onions and garlic. Then add the chopped vegetables, spices, and herbs and simmer gently for about 15 minutes. The vegetables should still have some bite. Meanwhile, fry the salmon in olive oil. Arrange the vegetables on plates, place the salmon on top, and garnish with herbs, if desired.
