Quinoa salad with tomato and mozzarella

Ingredients for 4 servings:

  • 200g quinoa
  • 2 m.-large tomato(s)
  • 1 bell pepper(s)
  • 2 spring onions
  • 250g mozzarella
  • 1 snake cucumber(s)
  • 1 handful of herbs of your choice
  • some lemon juice or vinegar
  • some olive oil
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Light summer salad with quinoa

Rinse the quinoa in a sieve, then prepare according to the package instructions. In the meantime, wash the vegetables and dice them. Wash the spring onions, remove the roots, and slice them into rings. Tear the mozzarella into bite-sized pieces. Chop the herbs and toss them with the remaining ingredients in a bowl to make a salad. Season to taste with vinegar or lemon juice, olive oil, salt, and pepper. Finally, add the still-warm “grains” to the salad. Let them marinate and season again. Done! Tip: You can be as creative as you like here, too. For example, you could steam the vegetables beforehand or use other vegetables. Since quinoa has a nutty flavor, grapes and cheese also go well with it. Anyone who has eaten quinoa will notice a feeling of happiness after just a short time.
