Healthy cookies with chia seeds, almonds and quark

Ingredients for 1 servings:

  • 250 g Skyr or low-fat quark
  • 150 g almonds, ground
  • 1 egg(s)
  • 50 g chia seeds
  • 50 g oat flakes
  • 50 g flaxseed
  • 1 pinch of baking powder, optional
  • e.g. erythritol (sugar substitute) or flavdrops, alternatively honey or agave syrup
  • e.g. fruit or nuts for decoration

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Combine all ingredients, except for any nuts or fruit, in a mixing bowl. Use two teaspoons to place small cookie-sized heaps onto a baking sheet. Don’t be surprised: the dough will be quite sticky. You can decorate the cookies as desired, for example, with nuts or blueberries. Preheat the oven to 190°C (top/bottom heat) and bake the cookies for about 20 minutes. They will quickly brown on the bottom. Let them cool slightly, then they will firm up and be easier to remove from the baking sheet. These cookies are a delicious, healthy snack to satisfy a little hunger.
