Creamy quinoa with plum compote

Ingredients for 4 servings:

  • 70 g quinoa
  • 85 g orange juice
  • 125 g water
  • 1 bag of vanilla sugar
  • 50 g sugar
  • 1 pinch of salt
  • 150 g natural yogurt
  • 1 tsp honey
  • 200 g cream
  • 1 bag of cream stiffener
  • 1 jar plum(s), 395 g drained weight
  • 1 star anise
  • 20 g brown sugar
  • 1 tsp, heaped cornstarch
  • Chocolate sprinkles for sprinkling

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Wash the quinoa thoroughly under warm running water and then drain. Bring the orange juice, water, sugar, vanilla sugar, and salt to a boil, add the quinoa, and simmer gently for 25 minutes. The quinoa grains should then be translucent and swollen. Stir occasionally. Turn off the heat and let them swell for another 10 minutes. Transfer to a bowl and let cool. Pour the plums into a sieve, reserving the juice. Mix the cornstarch with a little of the juice. Bring the plum juice to a boil with star anise and brown sugar and thicken with the cornstarch. Let cool, then stir into the plums. Mix the yogurt and honey with the quinoa. Whip the cream until stiff, gradually adding the cream stabilizer. Mix with the quinoa. Pour the plums into a glass, then the cream, then the plums and cream again. Finally, sprinkle with chocolate sprinkles.
