Maria Spengler's semolina porridge with apricots

Ingredients for 10 servings:

  • 2 ½ liters of whole milk
  • 250 g semolina
  • 200 g sugar
  • 2 tsp cinnamon powder
  • 1 pinch of salt
  • 800 g apricot(s) (can), drained, or sour cherries

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Bring the milk to a simmer. In a small bowl, combine the semolina, sugar, cinnamon, and salt. Once the milk boils, add the semolina mixture, stirring constantly. Simmer the semolina mixture on low heat for 5 minutes, stirring constantly, until thickened. The semolina should have a creamy consistency; add a little more milk if necessary. Remove the pan from the heat and let the semolina rest for 5 minutes. Finally, add the drained apricot pieces.
