Vegan BBQ Quesadillas

Ingredients for 3 servings:

  • 6 slice(s) cheddar cheese, vegan
  • 3 tortillas
  • BBQ sauce
  • 200 g smoked tofu
  • 6 tbsp corn kernels
  • 1 tbsp liquid smoke
  • 1 tbsp soy sauce
  • salt and pepper
  • 4 onions
  • 1 pinch(s) of raw cane sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

with vegan mince, caramelized onions and vegan cheddar

For the mince, crumble the tofu with a fork or food processor. Fry in a little vegetable oil in a large pan until crispy all over. Season with salt and pepper halfway through. Deglaze with liquid smoke and soy sauce, stir in the corn, and set aside. Heat a little more oil in the pan and stir-fry the onions over medium heat until soft and browned. Stir in the sugar and let it caramelize. Brush the tortillas with BBQ sauce. Top the bottom half with the mince, onions, and two slices of cheese each. Fold the top half closed. Heat a little more oil in the pan and toast the quesadillas for 2-3 minutes on each side. While frying, place a pot or smaller skillet on top of the quesadillas to prevent them from opening. Remove and cut into quarters. Serve with salsa or guacamole.
