Bean patties with spinach and oats

Ingredients for 2 servings:

  • 240 g white beans
  • 50 g baby spinach, fresh
  • 70 g oat flakes, fine
  • 1 tsp vegetable stock powder
  • ½ tsp salt
  • 1 garlic clove(s), fresh
  • 1 tsp mustard, medium hot
  • 1 tsp cornstarch
  • 1 broccoli, the stalk
  • 3 tbsp cheese substitute, vegan, grated, if desired
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Drain and wash the beans, then puree them with the washed baby spinach, vegetable stock powder, and salt. Finely chop or press the garlic and add it to the puree. Coarsely grate the broccoli stalk and mix it into a batter with the oats, mustard, cornstarch, and, if desired, vegan cheese substitute. Form the mixture into medium-sized patties and fry them in a pan with oil until crispy on both sides.
