Ingredients for 8 servings:

  • 600 g sausage (meat sausage, hunting sausage, bockwurst, etc.)
  • 5 bell pepper(s), red
  • 5 tomatoes, ripe (alternatively 2 small cans peeled)
  • 2 liters of vegetable broth
  • 150 g tomato paste, seasoned
  • 250 ml tomato ketchup
  • 2 onions
  • 1 garlic clove(s)
  • 2 gherkins
  • salt and pepper
  • Paprika powder
  • Sugar
  • Cucumber juice
  • Parsley
  • Crème fraîche
  • Sauce thickener

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Cut the tomatoes and sausage into small pieces, slice the bell peppers into small strips, and dice the onions, garlic, and gherkins. Sear the sausage and set aside. Then fry the onions and garlic until translucent. Bring the bell peppers to a boil with 2 liters of vegetable stock. Add the tomatoes and onions/garlic and simmer for 5 minutes. Add the sausage, ketchup, and tomato paste, and season to taste with salt, pepper, paprika, and sugar. Bring back to a boil briefly and season to taste. Finally, add the gherkins. If possible, add about 5 tablespoons of the gherkin stock to the pot. Season again to taste. Thicken the soup to taste. Serve with parsley and crème fraîche.
