Asparagus Carbonara

Ingredients for 4 servings:

  • 500 g asparagus, green
  • 250g spaghetti
  • butter
  • olive oil
  • powdered sugar
  • 3 eggs
  • 2 tbsp Marsala
  • 1 tbsp white wine
  • 2 tbsp Parmesan
  • herbs, fresh
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim the asparagus, but do not peel it, and cut it into 3 cm long pieces. Melt a small knob of butter and 1 tablespoon of olive oil in a large pan, then toss the asparagus pieces in it for a few minutes. Sprinkle with a touch of powdered sugar and salt. Whisk the eggs with the white wine and Marsala, then fold in the Parmesan cheese. Cook the spaghetti, drain, and add it to the egg mixture while still hot. Stir to combine. Then add the spaghetti and egg mixture to the hot pan with the fried asparagus pieces. Mix everything together with two forks. Season with pepper and fresh green herbs. Serve immediately, piping hot.
