Ingrid's Tomato and Apple Chutney

Ingredients for 1 servings:

  • 1 kg tomato(s), peeled, pitted and diced
  • 1 kg apples, sour, peeled and diced
  • 2 large onions, diced
  • 600 ml vinegar (apple cider vinegar)
  • 1 piece(s) ginger, thumb-sized – half grated, the other half cut into very fine cubes
  • 300 g brown sugar
  • 2 chili peppers, red and green, cut into fine rings
  • 1 tbsp salt
  • tbsp black pepper, coarsely ground

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine everything in a pot and simmer until thickened. This will take at least 1.5 hours. Pour the mixture into hot jars and let it steep for four weeks. This is difficult, though, because it tastes so good – even on semi-hard cheese and with meat.
