Ingredients for 2 servings:
- 2 apples
- 1 large kohlrabi
- 2 m.-large carrot(s)
- 1 handful of arugula or lettuce of your choice
- 3 tbsp pomegranate vinegar or other fruit vinegar
- 5 tbsp olive oil
- 1 tbsp honey
- 2 tsp mustard
- 1 small spring onion(s)
- 1 clove(s) garlic
- salt and pepper

Summer salad, few ingredients
If you have a food processor, you can use it to coarsely grate carrots, kohlrabi, and apple. I cut the ingredients into sticks and tore the arugula into bite-sized pieces. Mix everything together in a bowl. For the dressing, put all the other ingredients in a jar and mix well. Pour everything over the salad and let it sit for a while. This delicious salad is ready. Tips: You can vary this salad to your liking. I could imagine using feta and walnuts, and herbs like parsley or chives would give the salad a different flavor.
