Low-carb burger with golden linseed bun

Ingredients for 4 servings:

  • 100 g almonds, ground
  • 50 g golden linseed
  • 30 g butter
  • 3 eggs, size L
  • 5 g psyllium husk flour
  • 100 g Greek yogurt
  • 1 tsp baking powder
  • 1 pinch of salt
  • 4 slices of butter cheese
  • 8 slice(s) of tomato(s)
  • 4 leaves of iceberg lettuce
  • 80 g mayonnaise
  • 800 g minced beef
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

For the burger buns, preheat the oven to 175°C (fan/convection oven). Place all ingredients in a mixing bowl and mix with a food processor until you have a smooth dough. Line a baking tray with baking paper. Then shape the dough into 4 equal-sized round buns and place them on the baking tray. Bake the buns for 30 minutes in the preheated oven. Remove from the oven and let cool. Season the ground beef with salt and pepper, knead well, and form four burger patties, each about 1 cm thick, from 200g of ground beef. Brown the patties in a pan, turning after about 2 minutes and cooking on the other side. Now place a slice of cheese on each burger patty while the meat is still cooking in the pan, so it melts slightly. Halve the golden linseed buns and spread both halves with mayonnaise. Place a leaf of iceberg lettuce and two tomato slices on the bottom half of each bun. Then remove the meat from the pan and place it on the prepared bun halves. Place the other bun halves on top.
