Ingredients for 4 servings:
- 150 g wheat flour
- 130 g wholemeal spelt flour
- 30 g sunflower seeds, ground, chopped or whole
- 200 ml water, warm
- 1 packet of dry yeast
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp oil, neutral
- 500 g minced beef
- 1 small onion(s)
- salt and pepper
- Spice mix (BBQ spice mix)
- some butter or oil for frying
- 4 tbsp, heaped quark (chili quark), e.g. from Milram
- 2 tsp Dijon mustard
- 1 half chili pepper(s), red
- 1 tbsp dried or frozen herbs
- 1 tbsp honey
- 4 slices of Chester cheese
- 1 large vine tomato(s), cut into strips
- 1 m.-sized onion(s), cut into rings
- 4 leaves of iceberg lettuce
- 4 gherkins, cut into strips

Classic burger in a sunflower seed bun with a spicy BBQ patty and chili mustard sauce
For the sunflower seed buns: Combine the wheat flour, wholemeal spelt flour, sunflower seeds, and salt in a mixing bowl and mix. In another bowl, add the warm water, dry yeast, and sugar and stir until dissolved. Add the yeast water and oil to the flour and knead with a hand mixer (dough hook) until a smooth dough forms. Let the dough rest for about 30 minutes, until it has doubled in size. Then divide the dough into quarters. Shape each piece into a ball in your hand and place it on a baking sheet lined with baking paper. Let the dough rise again in a warm place for about 30 minutes. Preheat oven to 200°C (top/bottom heat). Brush the buns with water, sprinkle with sunflower seeds, and bake in the oven for 15 minutes. For the burger patties: Dice the onion, knead it with the ground beef, and season with salt, pepper, and the BBQ seasoning. Form 4 patties by hand or using a burger press and fry them in a pan with a little butter or olive oil on both sides. If you like, you can place a slice of cheese on the cooked side after flipping the burgers to help the cheese melt a little. For the chili and mustard sauce: Finely dice half a chili pepper and then mix with the quark, mustard, herbs, and honey. Season with salt and pepper to taste. Once everything is ready, all you need to do is top the burgers – cut open the buns and spread the sauce on them, then top the patty with the cheese, lettuce, onion rings, cucumber strips, and tomato slices.
