Buttermilk bread with oat flakes and low-fat curd cheese

Ingredients for 1 servings:

  • 200 g flour (wholemeal flour)
  • 300 g wheat flour
  • 100 g oat flakes
  • 5 g sugar
  • 15 g salt
  • 125 g low-fat curd cheese
  • 350 ml buttermilk
  • 1 cube of yeast, fresh
  • some oil
  • some oatmeal

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Dry mix the two types of flour, oats, sugar, and salt. Add the quark and buttermilk. Crumble in the yeast and knead the dough for 10 minutes. Cover the dough and let it rise. Once the dough has risen slightly, knead it again. Repeat this process several times. Lightly coat a loaf pan with oil and dust with flour. Place the bread dough in the pan, cut a small opening, and brush with water. Sprinkle the bread with oats and let the dough rise briefly again. Preheat the oven to 250°C, then bake the bread at approx. 200°C for approx. 50-60 minutes. To create steam, pour approx. 300 ml of water into a bowl and place it in the oven. Brush the bread with water twice during the last 10 minutes.
