Ingredients for 3 servings:
- 400 g zucchini, finely chopped
- 2 tbsp olive oil
- 1 small onion(s)
- 1 clove(s) garlic
- 100 g cream cheese with herbs
- 750 ml broth or water
- Salt
- pepper
- chili
- Thyme
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel and finely chop the onion and garlic. Heat the olive oil in a saucepan and sauté the onion and garlic. Then add the thyme and the finely chopped zucchini and sauté. Add stock or water and bring to a boil along with the spices. Simmer for about 10 minutes, then puree everything with a hand blender. Add the herb cream cheese and bring back to a boil briefly. Finally, season to taste with salt and pepper.
