Ingredients for 4 servings:
- 1,000 g wheat flour
- 18 g dry yeast
- 500 ml water, lukewarm, a little more if needed.
- 2 tsp cane sugar
- 3 tsp salt
- a little wheat flour for dusting and for the hands

Working time approx. 25 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 2 hours 50 minutes

Stir the yeast and sugar into 500 ml of lukewarm water and mix well. Let rise in a warm place for 15 minutes. Put 1000 g of wheat flour into a large bowl, add the yeast water and the additional water, and mix well. Knead with your hands until the dough no longer sticks to the sides of the bowl. Cover the dough and let it rise in a warm place for 1 hour. Keep some wheat flour ready for dusting—it’s best to put some on a flat plate. Divide the dough in the bowl into 4 pieces and, with floured hands, form 4 flatbreads (not too flat!) and place them on a baking sheet lined with baking paper. Brush (or spray) a little water onto the flatbreads. Place the baking sheet in the oven preheated to 200 °C (400 °F) on the middle rack (or the second from the bottom if there are 4 racks). Bake for 70 minutes.
