Ingredients for 2 servings:

  • 750 g apples (soft-fleshed and sweet)
  • 250 g sugar (crystal)
  • 5 tbsp rum
  • 500 g flour (smooth)
  • 250 g raisins
  • 130 g walnuts
  • 1 ½ packets of baking powder
  • some cinnamon (to taste)
  • 2 tsp, heaped gingerbread spice
  • 1 tbsp cocoa powder
  • 70 g candied lemon peel (candied fruit)
  • 70 g candied orange peel (candied fruit)

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Baked in advance, this apple bread can be frozen for more than 1 year

Core the peeled apples. Chop the apples into small pieces and mix with half of the rum and the granulated sugar. Let them rest for about 12 hours (preferably overnight). The next day, roughly chop the walnuts and mix well with the remaining ingredients (preferably by hand). Then stir in the apples. Form this dough into two rolls (or three if you prefer), spray or brush with water, and bake in an oven preheated to 180°C for about 1 hour.
