Celery soup with pears

Ingredients for 4 servings:

  • 5 stalk(s) Celery
  • 1 potato(s), floury
  • 2 onions
  • 700 ml vegetable stock
  • 200 ml cream
  • salt and pepper
  • 1 pear(s)
  • 1 tbsp butter
  • 2 tsp sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Clean, wash, and slice the celery. Peel, wash, and finely dice the potatoes. Peel and dice the onions. Heat butter in a saucepan and sauté the onions. Add the celery and potatoes. Sauté for about 5 minutes. Add the broth and cream. Season with salt and pepper. Cover and simmer over low heat for 20 minutes. Wash, quarter, core, and slice the pear. Heat butter in a pan and fry the pear slices on both sides. Sprinkle sugar over the soup, let it caramelize slightly, then remove from the heat. Purée the soup until smooth. Season to taste and serve with the pears.
