Ingredients for 1 servings:
- 4 g almond flakes
- 100 g celeriac
- 1 small pear(s)
- some olive oil
- 25 ml vegetable stock
- e.g. sage, dried
- 8 g almond butter
- Salt and pepper, black, from the mill
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Makes enough for two slices of bread
Lightly brown the almond flakes in a pan without fat, then let cool. Peel and finely dice the celery, then sauté in hot oil. Peel, core, and dice the pear, and add to the celery. Deglaze with the stock, cover, and simmer over low heat for 10 minutes. Once soft, remove from the heat to allow it to cool slightly. Transfer to a mixing bowl and puree with a hand blender. Stir in the almond butter and sage, and season with salt and pepper. Spread on bread and serve sprinkled with the almonds. This is enough for two slices of bread.
