Ingredients for 4 servings:
- 500 g swede(s)
- 1 onion(s)
- 1 tsp coriander seeds
- 1 tbsp butter
- 1 tbsp oil
- 1 tsp marjoram, dried
- 200 ml vegetable stock
- 2 apples, sour
- e.g. salt and pepper
- e.g. nutmeg
- 1 tbsp apple cider vinegar or lemon juice
- 1 tsp apple syrup to thicken

Peel the swede and dice it into approximately 1 cm cubes. Peel the onion, quarter it, and slice it into strips. Toast the coriander in a dry pan over medium heat, stirring occasionally, until it begins to smell. Then grind it into a mortar and pestle. Put the butter and oil in a saucepan and sauté the diced swede and onion strips. Add the coriander and marjoram and sauté briefly. Deglaze with the stock, cover, and sauté over low heat for about 10 minutes. Meanwhile, peel the apples and dice them. Add the diced apples to the vegetables and season with salt, pepper, and nutmeg. Sauté for another 10 minutes, until the vegetables are al dente. Season with apple cider vinegar and thicken with apple syrup. This goes very well with bratwurst and mashed potatoes.
