Onion cake without a base

Ingredients for 4 servings:

  • 500 g vegetable onions
  • 500 g quark, 0.2% fat or quark cream, 0.1% fat
  • 1 tbsp rapeseed oil
  • 150 g lean ham cubes
  • 50 g spelt flour
  • 4 eggs
  • 180 g grated cheese with 3% fat
  • smoked salt
  • Pepper from the mill
  • Caraway, optional

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Low in calories, suitable for WW

Peel the onions, cut them into strips and sauté them in a pan in rapeseed oil for about 10 minutes, then add the ham and sauté for a further 5 minutes. In the meantime, whisk the eggs with the flour, the quark and 60g of cheese in a bowl until smooth, season with salt and pepper to taste. For better digestibility, add a little caraway seeds if desired. Let stand for 10 minutes. Fold in the slightly cooled onion mixture and mix well with the quark mixture. Line a 26cm springform pan with baking paper and pour the mixture in. Smooth it out and scatter the remaining cheese on top. Bake for about 30 minutes at 180°C, using the grill function for the last 5 minutes. The entire onion tart has 1500 kcal. A Federweißer or a dry rosé goes well with this, of course.
