Vegetable spelt quiche

Ingredients for 4 servings:

  • 300 g flour (spelt flour)
  • Pinch(s) of sugar
  • ¼ cube of yeast, fresh
  • ¼ ml water
  • 2 bell peppers, red, yellow
  • 1 clove(s) garlic
  • 1 onion(s)
  • 1 stalk(s) leek
  • 100 g ham (cooked ham)
  • 125 g yogurt
  • 50 g cheese for sprinkling
  • 3 eggs
  • salt and pepper
  • Parsley
  • Oil (olive oil)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

For the dough: Mix yeast with a pinch of sugar and warm water, then stir in the flour. Knead the mixture into a dough and let it rise for a while (30-40 minutes). For the filling: Add olive oil to a pan and chop the garlic and onion, then sauté until translucent. Gradually add the chopped vegetables and ham and sauté. In a separate container, mix the yogurt, eggs, salt, and pepper. Pour the dough into a springform pan (don’t forget the rim). Spread the vegetable mixture on top, then pour the egg mixture over it. Sprinkle with cheese and parsley, and bake in the oven. The recipe can, of course, be adapted to suit the ingredients (spinach, broccoli, mushrooms). This recipe not only tastes fantastic, but is also very healthy and very, very low in fat!
