Kaiserschmarrn made from white beans

Ingredients for 2 servings:

  • ½ can white beans, equivalent to approx. 120 g drained
  • 80 g oat flakes
  • 30 g sugar
  • pinch(s) of salt
  • 200 ml carbonated mineral water
  • Oil for frying
  • e.g. powdered sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Combine all ingredients in a blender until a viscous mixture forms. Draining the beans may cause the batter to be too thick or too thin. Add more oats or water if necessary and blend again. Heat 1 tablespoon of oil in a pan. Once the pan is hot, add the batter. After two minutes, divide into quarters and turn each quarter. Use a spatula to divide the batter into smaller pieces again. Sprinkle 2-3 tablespoons of sugar into the pan and, turning frequently, caramelize the pancake. Garnish with powdered sugar. Tip: If you like, you can also add vanilla extract or raisins to the batter.
