Vegan plate with rice, lentils, tofu and Brussels sprouts

Ingredients for 1 servings:

  • 50 g lentils, red or yellow
  • 100g tofu
  • 100 g Brussels sprouts
  • 60 g brown rice or basmati rice
  • 1 tbsp vegetable oil
  • 1 small onion(s)
  • some tomato paste
  • salt and pepper
  • e.g. herbs (oregano, basil…)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

First, finely chop the onion and dice the tofu. Wash the Brussels sprouts and remove the outer leaves. Boil the Brussels sprouts in salted water for about 10-15 minutes. Cook the rice according to the package instructions. Meanwhile, fry the onions and tofu together until the tofu is lightly browned. Then add the lentils and pour in water until the lentils are lightly covered. Add more water if necessary. Add tomato paste and seasonings of your choice. Only add salt at the end of the cooking time! Simmer for about 10-15 minutes, until the lentils are tender. Then season with salt to taste. Arrange the lentils, Brussels sprouts, and rice on a plate.
