  • 500 g sesame seeds, unhulled
  • 165 g sesame oil
  • ½ tsp salt

To prepare this, you’ll need a powerful hand blender or blender, as well as a pan. Toast the sesame seeds in a dry, hot pan over low heat until lightly browned. Stir frequently to prevent burning. Place the cooled sesame seeds in a blender along with half of the sesame oil and half a teaspoon of salt. Blend until a smooth consistency is achieved. This may take a few minutes, depending on your blender. If the paste becomes too thick, add a little sesame oil until a very thick, homogenous mixture is formed. Pour the freshly prepared tahini into a sealable jar. The sesame paste will keep for many weeks in the refrigerator and can be used as a base for hummus, baba ghanoush, and much more. The unhulled sesame seeds give this tahini a very interesting and intense flavor. Use very sparingly; less than half the amount of store-bought white tahini is usually sufficient! 667 kcal/100g
