Quick zucchini tart with olive oil

Ingredients for 4 servings:

  • 1 package of puff pastry (275 g)
  • 100 g goat’s cheese
  • 4 tbsp water
  • 1 clove(s) garlic, crushed
  • 80 g Parmesan, grated
  • 350 g zucchini, cut into thin slices
  • 1 tbsp olive oil
  • Salt and pepper, black

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Preheat the oven to 220°C (top/bottom heat, fan oven: 200°C). Place the puff pastry with the baking paper on the baking sheet and score a border of about 2 cm all around. Mix the goat cheese with 2-4 tablespoons of water, the garlic, and half of the Parmesan cheese and spread it on the dough, leaving the edges free. Arrange the zucchini slices on the cheese mixture, brush with olive oil, and season with salt and pepper. Sprinkle with the remaining Parmesan cheese and bake the tart in the oven for 20 minutes, until the pastry is golden brown and puffed up. You can also refine this tart with crumbly fried minced meat or finely diced and fried bacon. Then add the meat to the pastry before the zucchini and continue as described above.
