Fried potatoes made from raw potatoes

Ingredients for 4 servings:

  • 8 m.-large potato(s), new
  • 100 g bacon
  • 2 onions
  • 2 garlic cloves
  • some caraway
  • some sea salt, from the mill
  • Pepper, mixed, from the mill
  • some herbs, fresh, from the garden, e.g. basil, thyme, marjoram, peppermint, dill
  • some olive oil or rapeseed oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

simple, with bacon and onions

Wash the new, medium-sized potatoes and chop them into small pieces. I either cut them into large cubes or not so thin slices. Chop the bacon into small pieces and fry them lightly, but not completely, in a pan. Remove the bacon from the pan and set aside. Add the potatoes to the pan, drizzle with a little olive or rapeseed oil, season with salt and pepper, and fry until golden yellow with a brown crust. Chop the onion and add it. About halfway through the cooking time, add caraway seeds, if desired, and continue frying. Meanwhile, finely chop the garlic and chop the fresh herbs from the garden. Add the garlic, herbs, and bacon just before the end of cooking and stir in. Then fry for about another 5 minutes at a low temperature until golden brown.
