Lamb's lettuce with mango dressing and pine nuts

Ingredients for 2 servings:

  • 150 g lamb’s lettuce
  • 2 tbsp balsamic vinegar, white
  • ½ mango(s)
  • 1 tbsp oil
  • ½ tsp honey or maple syrup
  • ¼ tsp ginger, grated
  • 2 tbsp broth
  • 1 tbsp pine nuts, roasted

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

fruity and crisp

Clean and wash the lamb’s lettuce. Spin dry thoroughly. Peel the mango and cut into small pieces. Combine with all the other ingredients and blend thoroughly with a hand blender. Fold the dressing into the salad and sprinkle with the toasted pine nuts.
