Mushroom and herb soup

Ingredients for 2 servings:

  • 2 onions
  • 2 garlic cloves
  • 300 g mushrooms, fresh
  • 600 ml vegetable stock
  • 200 g herb cream cheese
  • Sugar
  • pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel and finely dice the onions and garlic. Trim the mushrooms, dry them, and slice them thinly. Heat the oil in a pan, sauté the onions and garlic, and add a pinch of sugar. Add the mushrooms, season with pepper, and fry vigorously until toasted. Deglaze with vegetable stock and stir in the cream cheese until it has dissolved. Cover the soup and simmer for about 5 minutes. Season to taste.
