Ingredients for 1 servings:

  • 220 g flour
  • 100 ml water, lukewarm
  • 1 egg yolk
  • 3 tbsp olive oil
  • ½ tsp salt
  • some flour for the work surface
  • some oil for brushing
  • 200 g sour cream
  • salt and pepper
  • Paprika powder
  • possibly chili powder
  • 1 handful of spring onions
  • 1 handful of onion(s), red
  • some sheep’s cheese

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

For the dough, first knead the listed ingredients together with a hand mixer for five minutes and then briefly mix them by hand. Then brush with a little oil and let rest wrapped in foil for about 30 minutes. Then roll out the dough thinly on a lightly floured work surface and place on a baking tray lined with baking paper. For the topping, season the sour cream with salt, pepper, paprika powder and possibly a little chili powder, and spread it on the dough. Finely chop the spring onions, slice the onion into rings and spread it on the sour cream layer. Crumble the feta cheese on top. Bake the tarte flambée in a preheated oven on the lowest rack at 220 degrees top/bottom heat for about 15-20 minutes. Note: You can change the spices and ingredients for the topping according to your taste.
