Winter chestnut soup

Ingredients for 4 servings:

  • 100 g butter
  • 3 small onions
  • 400 g chestnuts, cooked, vacuum-packed
  • 750 ml vegetable stock
  • 350 ml cream
  • 125 ml milk
  • Salt
  • Sugar
  • some cinnamon powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Heat the butter and sauté the finely chopped onions until translucent. Add the chopped chestnuts and top up with the stock. Simmer over low heat for 30 minutes. Then add the cream and milk and simmer for another 5 minutes. Blend until smooth and season with spices.
