Ingredients for 5 servings:
- 1 pack of meat substitute (e.g. Like Meat grilled chicken)
- 3 eggs
- 1 onion(s)
- 5 garlic cloves
- 1 small piece(s) of ginger root
- 1 stalk(s) leek
- 1 bell pepper(s)
- 3 carrots
- 1 chili pepper(s)
- 1 tbsp rapeseed oil
- 2 packs of Mie noodles (approx. 250 g each)
- 1 jar mung bean sprouts (approx. 370 g)
- 1 bunch of spring onions
- 200 ml soy sauce
- 50 ml sesame oil
- e.g. chili flakes
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes
Finely chop the onion, garlic, and ginger and set aside on a plate. Cut the leek, bell pepper, carrot, and chili into suitable pieces and place on another plate. Place the spring onions in a separate bowl. Finely slice the like meat and leave in the package until needed. Whisk the eggs in a cup. Mix the soy sauce and sesame oil well in a separate cup. Rinse the mung bean sprouts in a colander. Cook the mie noodles according to the package instructions, drain, and refresh with cold water. Heat the oil in a large frying pan or wok over high heat and fry the like meat for about 5 minutes until crispy. Then remove from the pan and set aside on a plate. Add the whisked eggs to the hot pan and fry for about 1 minute until slightly set. Also add to the plate. Add the onion, garlic, and ginger to the pan and fry briefly until fragrant. Add the leeks, bell peppers, carrots, and chili and stir-fry for a few minutes until the vegetables are tender. Add the cooked mie noodles and mung bean sprouts. Mix well and pour the soy sauce mixture over the noodles. Season to taste with salt, pepper, soy sauce, and additional seasonings. Finally, sprinkle the spring onions over the noodles and serve hot.
