Ingredients for 2 servings:
- 200 g chicken breast fillet(s), optionally pork fillet
- 3 bell peppers
- 2 onions, red
- 200 g cherry tomatoes
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Italian herbs (frozen), optionally fresh herbs
- 1 cucumber(s)
- 2 garlic cloves
- 50 g light cream
- 150 g low-fat yogurt
- salt and pepper
- 8 slice(s) breakfast bacon, lean, thin slices
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Wash the meat, pat dry, and cut into finger-thick slices. Halve the peppers, remove the seeds and membranes, wash, and cut into bite-sized pieces. Wash the tomatoes. Peel the onions and cut into eighths. Place everything in a bowl. Mix the olive oil with the lemon juice and herbs and toss with the meat and vegetables in the bowl. Let it marinate for about 30 minutes. For the tzatziki, wash the cucumber thoroughly, halve it lengthwise, remove the seeds, and grate it into a bowl. Peel the garlic and press it in. Stir in the crème légère and yogurt, and season with salt and pepper. Remove the meat, peppers, tomatoes, and onions from the marinade and thread them onto skewers, alternating them with the bacon. Season with salt and pepper and place on a baking sheet lined with baking paper. Grill in a hot oven for 10 minutes (top heat only if possible), turning at least three times. Serve with the tzatziki.
