Salmon in a zucchini coating with mint tzatziki

Ingredients for 4 servings:

  • 4 pieces of salmon, ready to cook, approx. 150 g
  • 1 zucchini
  • Olive oil, for frying
  • 1 small cucumber(s) (or ½ large)
  • 1 clove(s) garlic
  • 3 sprigs of mint, possibly 4
  • 250 g yogurt
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Wash the cucumber and coarsely grate it. Peel the garlic and then press it. Wash the mint and chop it very finely (set a few leaves aside for decoration). Mix everything together with the yogurt in a bowl. Season with salt, pepper, and a small pinch of sugar. Divide the salmon into three equal pieces. Cut the zucchini lengthwise into twelve thin slices (using a slicer or a mandolin). Dip the salmon into the slices. In a non-stick pan with a little oil, brown each side for a good two minutes, then cook until medium-rare. First, fry the side with the “seam” of the zucchini to seal the salmon parcel. Let it rest for two minutes before serving, then season with salt and pepper. To serve: Arrange the salmon parcels on a flat plate, pour the mint tzatziki into a small bowl or glass, garnish with mint, and serve with the salmon. Enjoy!
