Prepare the poultry pieces as usual, seasoning with salt and pepper. Mix the honey with the lemon juice and olive oil. Finely chop the rosemary needles from one (!) sprig and stir into the honey mixture. Season with salt and pepper to taste. Set aside some of the marinade. Then mix the chicken pieces thoroughly with the remaining marinade. Turn frequently during the grilling process and occasionally brush the chicken pieces with the marinade using the remaining rosemary sprig. Of course, you can also cook the chicken pieces in the oven. The cooking time depends on the size of the chicken pieces chosen and, of course, your home oven. Guidelines: Chicken wings take 20-25 minutes, chicken drumsticks about 30 minutes, chicken thighs with breast portion about 45 minutes at 200 degrees (convection). Proper grilling on a charcoal grill usually reduces the cooking time. Tip: You can also use a whole rabbit. Open the rabbit, flatten it, and process as described—this is the real thing! Grilling time at medium heat: 35 – 45 min.
