Ingredients for 1 servings:

  • 60 g leftovers (strawberry greens with some fruit)
  • 60 g xylitol (sugar substitute)
  • 125 ml water

Instructions

For the syrup, you only need the green tops of the strawberries, with a little flesh attached. Remove any remaining stems. Bring all ingredients to a boil in a saucepan, stirring constantly until the sugar substitute has dissolved. Slightly crush the strawberry tops with a spoon. Then reduce the heat to low and simmer the liquid with the lid on for 20 minutes. Transfer the mixture to a tall container and blend with an immersion blender until creamy. Transfer the syrup to a sterilized jar, let it cool, and store in the refrigerator. If using table sugar, the quantity can be increased to 80 g. From personal experience, xylitol (a sugar substitute) has a slightly higher sweetening power. The calorie information refers to the use of xylitol (a sugar substitute).
