Ingredients for 2 servings:
- 200 g sweet potatoes
- 150 g mushrooms
- 1 chili pepper(s), fresh
- 1 tsp curry paste, red
- 1 small onion(s), diced
- 1 clove(s) garlic
- e.g. ginger
- 1 pinch of turmeric
- 1 pinch of curry powder
- 100 ml milk
- 1 pinch(s) of sugar
- 40 ml mango juice
- Olive oil or sesame oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Sauté the onions in a little olive or sesame oil in a pan. Finely chop the garlic and chili pepper and add them. Now dice or thinly slice the sweet potatoes and add them to the onions. Season with turmeric, ginger, curry powder, and the red curry paste and continue to cook over low heat. Clean and peel the mushrooms with a kitchen towel or brush. Chop them and add them to the rest. Finally, mix the milk with the mango juice and a little sugar and pour over the mixture. Bring to a boil for another 3-4 minutes and serve. Perfect with rice.
