Pea soup

Ingredients for 2 servings:

  • 150 g split peas, green, dried
  • 2 shallots
  • 2 tsp marjoram, dried
  • 120 ml vegetable stock
  • 2 small carrots
  • 2 spring onions
  • ¼ apple
  • 150 g smoked tofu
  • salt and pepper
  • possibly Vienna sausages (veggie wieners)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 20 minutes

vegan

Cook the peas for 1-1.5 hours. Dice the shallots and smoked tofu. Sauté the tofu. After about 5 minutes, add the shallots and sauté until translucent. Add the strained peas, 100 ml vegetable stock, and the marjoram. Simmer on low heat for 45 minutes, stirring occasionally. Peel and slice the carrots. Trim the spring onions and slice them into rings, and dice the apple quarter. Add everything to the pea soup after it has simmered for about 35 minutes. Season with salt and pepper and stir in the remaining vegetable stock. If desired, add the veggie sausages 5 minutes before the end of the cooking time.
