Watermelon and avocado salad with feta and mint

Ingredients for 2 servings:

  • ¼ watermelon(s), seedless
  • 1 small avocado(s)
  • ½ onion(s), red
  • 80 g feta cheese
  • 1 tbsp mint leaves, picked
  • ½ lime(s), juice
  • 2 tbsp lemon oil (olive oil)
  • salt and pepper
  • some chili pepper(s), without seeds, amount depending on spiciness and taste
  • some lettuce leaves from baby lettuce

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes

Mix lime juice, oil, salt, pepper, and finely diced chili pepper to make a dressing. Peel the watermelon, remove any seeds, and dice the flesh. Halve the avocado, remove the stone, scoop out the flesh, and dice it as well. Thinly slice the peeled onion. Immediately toss everything with the dressing and let it marinate briefly. Fold in the mint and season to taste. Arrange the salad on serving plates, sprinkle with crumbled feta cheese, and serve garnished with the baby greens.
