Vegan mushroom ragout

Ingredients for 2 servings:

  • 3 king oyster mushrooms
  • 5 large mushrooms
  • 1 onion(s)
  • 1 shot of white wine
  • 250 ml soy cream Cuisine, light
  • 1 bunch parsley, flat
  • some oil
  • salt and pepper
  • Nutmeg, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Clean and slice the mushrooms. Finely chop the onions and parsley. Add all ingredients to a pan with heated oil and fry over medium heat until the ingredients are nice and translucent and cooked through. Then deglaze with a generous splash of white wine and simmer. After a few minutes, the alcoholic taste will have dissipated. Now add the vegan cream alternative and season with salt, pepper, freshly grated nutmeg, and paprika. Adjust the seasoning to your liking. Let the mushroom ragout simmer for a while. It tastes great with bread dumplings, pasta, or rice.
