Ingredients for 4 servings:
- 375 g flour
- 75 g semolina
- 1 ½ tsp salt
- 4 large eggs
- 2 ½ dl milk-water mixture
- 200 g leek
- 200 g bacon, diced
- 250 g cheese (Appenzeller), crisp, diced
- Butter, for frying
Instructions
Working time approx. 50 minutes; Total time approx. 50 minutes
Appenzeller Spätzli
Mix the flour and salt. Whisk the eggs, mix them with the milk and water mixture, and then add the flour. Beat the batter until it bubbles. Boil plenty of salted water in a large pan. Press the batter through a spaetzle sieve into the boiling water. As soon as the spaetzle float to the top, remove them with a slotted spoon. Place them in a sieve and refresh with cold water. Finely slice the leek. Fry in butter with the bacon cubes and the spaetzle until golden brown. Briefly fry the Appenzeller cheese, stirring constantly.
