Vegetarian cucumber vegetables

Ingredients for 2 servings:

  • 2 cucumbers
  • 4 tomatoes
  • 2 zucchinis
  • margarine
  • 1 cup sour cream
  • vegetable broth
  • salt and pepper
  • nutmeg
  • Herbs, fresh to taste

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the vegetables, peeling the tomatoes first. Melt some margarine in a saucepan, add the vegetables, and simmer over low heat in a covered pan. CAUTION: DO NOT add water. Stir occasionally and add the seasonings and sour cream just before serving. All side dishes are suitable! It’s quick! It’s very low in calories!
