Ingredients for 4 servings:

  • 1 kg jacket potatoes
  • 8 cherry tomatoes, quartered
  • 2 cucumbers, diced
  • 3 onions, diced
  • 3 tsp, heaped garlic powder
  • 1 tbsp vinegar
  • 1 tbsp sugar
  • 1 tbsp curry powder, I use a heaped tbsp
  • 1 tsp pepper
  • 4 tsp, heaped mayonnaise
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

refreshing

Slice the jacket potatoes. Dice the tomatoes, cucumbers, and onions. Mix everything in a large bowl. Make a marinade from the remaining ingredients and mix in. A delicious and refreshing potato salad. My mother brought this recipe back from Spain in 1970, and it’s my favorite potato salad.
