Summer potato salad without mayonnaise

Ingredients for 4 servings:

  • 1.2 kg jacket potatoes, waxy
  • 1 bunch of spring onions
  • 3 bell peppers, colored
  • 4 gherkins
  • ¼ liter vegetable broth
  • 2 tbsp mustard
  • 6 tbsp herb vinegar
  • 6 tbsp oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Boil the jacket potatoes, let them cool, peel them, and slice them. Wash the spring onions and slice them into rings. Dice the bell peppers and gherkins. Bring the vegetable stock to a boil and let it cool slightly. Then mix with the mustard, herb vinegar, and oil, and season with salt and pepper. Mix the jacket potatoes, spring onions, gherkins, and bell peppers, pour the marinade over them, and let it sit for a while. Season again before serving.
