Ingredients for 4 servings:

  • 1 pack of smoked tofu
  • 1 onion(s)
  • 2 cloves garlic
  • 1 piece(s) ginger, thumb-sized
  • 2 tbsp olive oil
  • 2 cans of chopped tomatoes, 400g each
  • 1 can of corn
  • 1 can of kidney beans, 400 g each
  • 5 chili peppers, dried, or 1-2 fresh
  • herbal salt
  • pepper
  • Agave syrup
  • 1 baguette(s), whole grain

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the smoked tofu into small cubes and mash them with a fork. Sauté the finely diced onion, garlic, and chili in olive oil and add the smoked tofu. Sauté for 10 to 12 minutes. Add the tomatoes and bring to a boil. Add the corn and beans and bring to a boil again. Season to taste and bring to a boil a third time. Serve hot with fresh whole-wheat baguette.
