Crispy couscous patties

Ingredients for 2 servings:

  • 100 g couscous
  • 20 g wholegrain oat flakes, fine
  • 20 g potato starch
  • 1 tsp vegetable broth
  • 3 tbsp soup vegetables, freeze-dried
  • ¼ liter of boiling water
  • 5 tbsp sunflower oil
  • 2 tsp curry powder, optional
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Combine the couscous, oat flakes, potato starch, vegetable broth, and soup greens. Pour boiling water over everything and stir well. Let the mixture swell for about 10 minutes, then form about 6-8 patties with wet hands and fry in oil over medium heat for 5-8 minutes on each side. If you like, you can add curry powder at the beginning.
