Simple vegan gnocchi pan

Ingredients for 6 servings:

  • 1 kg gnocchi
  • 200 g minced meat substitute
  • 200 g smoked tofu
  • 4 onions, red
  • 3 garlic cloves
  • 2 bell peppers, red
  • 1 can tomatoes, pureed, approx. 400 g
  • ½ can corn
  • Fat for frying
  • Soy sauce
  • salt and pepper
  • Cayenne pepper
  • chili flakes
  • Paprika powder
  • Fresh coriander, for sprinkling

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Peel the onion and garlic. Halve the onion and slice thinly. Sauté the slices with the finely chopped garlic in a large pan. Pat the tofu dry, cut into small cubes, and fry for a long time in a small separate pan with plenty of fat. Cut the bell peppers into long, thin strips and add them to the large pan with the minced meat and corn; continue frying. Season everything with spices and soy sauce. Prepare the gnocchi according to the package instructions and then fry briefly and vigorously in the pan until golden brown. You can also remove the fried vegetables from the pan briefly to do this. Mix the tofu, gnocchi, and fried vegetables together in the large pan and add the passata. Season the gnocchi again, reduce the sauce if necessary, and/or adjust the seasoning. Chop the fresh cilantro and sprinkle it on the ready-to-serve portions.
