Pan-fried cherry tomatoes and baked potatoes

Ingredients for 5 servings:

  • 5 vine(s) of tomatoes, 8 pieces each
  • some olive oil
  • 2 garlic cloves
  • Salt
  • 1 kg potatoes, small
  • e.g. olive oil
  • Salt
  • some rosemary sprigs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

For the baked potatoes, pre-boil the potatoes for about 10 minutes. Cut them in half and toss with olive oil, salt, and a few rosemary sprigs in the oven at at least 200°C with fan for about 20-30 minutes, until lightly browned and crispy. For the pan-fried tomatoes, wash the tomatoes and vines and pat dry. Heat the oil in a pan. Crush the garlic and fry with the tomatoes for about 3-4 minutes, stirring occasionally.
