Carrot vegetables with a twist

Ingredients for 2 servings:

  • 1 bunch of carrots
  • 50 g butter
  • 6 shallots
  • pepper
  • tarragon
  • Ginger

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the carrots and cut them into small rounds. Peel the shallots, leaving smaller ones whole and halving the larger ones. Melt the butter in a heavy saucepan, add the carrots and shallots, season with salt, and top with a generous pinch of tarragon. Stir until all the vegetables are coated, cover the pan, and simmer over low heat. After about 10 minutes, the carrots and shallots should be tender. For a change, peel a finger-sized piece of ginger, dice it into tiny pieces, and add it to the carrots, omitting the tarragon. Tastes great with anything stir-fried.
